Asparagus Tarragon Quiche

Serves 4-6

You can also leave the asparagus spears whole and arrange in a pinwheel pattern.


  • Cooking spray
  • 1 cup cut asparagus spears, lightly steamed
  • 1 cup shredded Swiss cheese
  • 1/4 cup scallions
  • 1 teaspoon dried tarragon
  • 1/2 cup packaged baking mix
  • 1 cup milk
  • 2 eggs


Preheat the oven to 400 degrees F.

Spray the bottom and sides of a large pie plate with cooking spray. Arrange the asparagus on the bottom of the pie plate. Sprinkle the Swiss cheese, scallions and tarragon over the asparagus.

Whisk together the baking mix, milk and eggs until smooth. Pour the mixture into the pie plate.

Bake for 20-25 minutes, until golden brown and firm to the touch. Cool 5 minutes before serving.
