Aunt Kits' Apple Macaroon

RECIPE INGREDIENTS
6 cooking apples (golden delicious or pippins).
3/4 Cup sugar
3 Tbsp. flour
1 tsp. cinnamon
½ tsp. mace (optional)
½ tsp nutmeg
1½ Cups chopped toasted pecans
6 Tbsp. of butter
3/4 Cup sugar
3/4 Cup flour
½ tsp. salt.
2 well-beaten eggs.
Lemon Sauce
1 cup boiling water
4 Tbsp. sugar
2 Tbsp. cornstarch
2 Tbsp. butter
2 Tbsp. lemon juice
slight grating of lemon rind
DIRECTIONS
Chop and toast pecans. Peel and slice apples.


Mix together the sugar, flour, cinnamon, mace and nutmeg.


Toss half of this mixture with the sliced apples and all the pecans.


Place into a buttered pie plate and sprinkle the remainder of the mixture over the top of the apples.


Cream together butter and sugar. Add the flour and salt. Finally add the eggs and mix well. Spread over the sugared apple slices using a spoon.


Bake in a 350 degree oven for about 40 minutes or until the top is browned.


Serve warm with cream, ice cream or your favorite sauce.


Also good with Lemon Sauce.


Lemon Sauce


Bring water and sugar to boiling point. Add cornstarch moistened with a little cold water. Stir while adding, and cook for 3 minutes. Add butter, lemon juice and rind.
