Authentic Hungarian Gulyas Soup

This is the true Guylas Soup from Hungary passed down to me from my Budapest relatives.
RECIPE INGREDIENTS
1 ONION
1/2 - 2 LBS. BEEF CHUCK MEAT - CUBED
1/2 OR 1  TSP. SALT
1/4 TSP GROUND BLACK PEPPER
1 PINCH OF GROUND CARROWAY SEEDS
1 GREEN PEPPER - DICED
2 WHOLE POTATOES - CUBED
1 TBL. HUNGARIAN RED PAPRIKA
2 BEEF BOUILLON CUBES
DIRECTIONS
Chop onions very small. Put in pot with 1/4 oz. or less of vegetable oil. Cook onions until glassy, not brown.


Add paprika, meat and salt with 2 1/2 - 3 cups of water.


Cover and let cook for 1 1/2 hrs.


Add spices.


When meat is almost tender (done), add potatoes and green pepper. Let boil until potatoes are cooked then add the beef bouillon cubes.


Taste to see if you need or want more spices.


Taste to your perfection.


If you want it as a stew, just thicken it to your liking.

Gulyas Leves (Soup)
Hungarians originally used Lard (same as bacon fat or Butter). I use it at times but mostly Olive Oil.
