It is not rizotto but taste is like rizotto, very mild and creamy thanks to avocado and cheese. Adding avocado mixture and cheese to the rice just after rice's cooked is the key to make this dish perfectly.
2 cups White Long Grain Rice
2 Avocados
4 tablespoon Parmesan Cheese
2 teaspoons Soy Sauce
1/2 cup Daysy Sour Cream
4 strips Bacon
4 tablespoons Olive Oil
2 oz Cheddar Cheese
1.Chop bacon and cheddar cheese.

2.In a sauce pan, combine 4 cups of water and 2 cups of rice. Bring it boil. Reduce heat to low, cover tightly, and simmer for 15-18 minutes or until all water is absorbed.

3.While rice is cooked, in a frying pan, heat olive oil and cook bacon until crispy.

4.Cut Avocado into half, remove the seeds, and scoop avocado pulp and mash in a bowl. Add parmesan cheese, soy sauce, sour cream, salt and pepper. Mix well.

5.When rice is cooked, add rice to the bowl. Stir until well coated.

6.Put avocado rice on the plate and put cooked bacon and cut cheddar cheese on top.
