Smoked salmon plays off crispy cucumber and creamy avocado.
- 1 tablespoon reduced-fat mayonnaise
- 1/2 teaspoon lemon juice
- 1/8 teaspoon cracked black pepper
- 8 very thin slices wheat bread
- 2 ounces thinly sliced smoked salmon
- 1 avocado ripe, sliced
- 12 thin slices European cucumber
Combine the mayonnaise, lemon juice and pepper in a small bowl. Thinly spread on the bread and top with the salmon, avocado and cucumber.
