Baked Cauliflower Patties

These crunchy patties are a healthy way to send some veggies to the family. Alternatively, grated zucchini, spinach, mashed peas can also be used.
RECIPE INGREDIENTS
1 cauliflower
1/2 a red onion
2 tbsp grated ginger
1 tsp Italian spice mix
1 cup bread crumbs
1/2 cup almond powdered
3-4 green chillies
1/4 cup shredded mint leaves
1 lemon
1/4 cup shredded cheese (cheddar or other)
DIRECTIONS
1. Break cauliflower into big florets


2. Boil water in a medium


sized pan, add a drop of oil, and a pinch of salt.


3.


Add the florets into boiling water, and boil at medium for


abut 10 minutes. The cauliflower should be crunchy and half


boiled.


4. Drain the water, cool with cold water.


5. While


cauliflower is boiling, caramelize the onions, with ginger


and green chillies.


6. Hand mash the cauliflower and


mix with other ingredients. Just use 1/2 cup bread crumbs at


this step.


7. Make flat 1 inch patties and roll in the remaining


bread crumbs.


8. Grease a baking pan.


9. Bake at


400 degrees for 10 minutes


10. Flip the patties and bake


10 minutes more.


Patties should be brown and crunchy. Enjoy


with ketchup.
