Baked Cheese Grits

4 cups of water
3 tablespoons butter
3/4 teaspoon salt
1 cup grits
1 cup grated sharp cheddar cheese
1/2 cup grated Monterey Jack cheese
1/2 cup whole milk
2 large eggs
salt and pepper to taste
Preheat oven to 350 degrees F.

Butter 8 by 8 inch glass baking dish. Bring water, butter and salt to a boil. Gradually whisk in grits. Reduce heat to medium, and cook until mixture thickens slightly, stirring often. Remove from heat.

Add both cheeses, and stir until melted. Season with pepper and more salt to taste. Whisk milk and eggs together in a small bowl. Gradually whisk egg and milk mixture into grits. Pour grits mixture into prepared dish. Bake until grits feel firm to touch in center, about 1 hour. They should be golden brown on top. Let stand for 10 minutes and serve.

Big favorite!!
This has quickly become a favorite recipe of mine and anyone I've served it to. I use white stone ground grits for a great flavor and I also leave out one egg so it's not quite as thick. Have had friends ask for the recipe EVERY time I've made it.
