  • 4 cups of water
  • 3 tablespoons butter
  • 3/4 teaspoon salt
  • 1 cup grits
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated Monterey Jack cheese
  • 1/2 cup whole milk
  • 2 large eggs
  • Salt and pepper to taste


Preheat the oven to 350 degrees F.

Butter a 8 x 8-inch glass baking dish. Bring the water, butter and salt to a boil. Gradually whisk in the grits. Reduce the heat to medium, and cook until the mixture thickens slightly, stirring often. Remove from heat.

Add both cheeses, and stir until melted. Season with pepper and add more salt to taste. Whisk the milk and eggs together in a small bowl. Gradually whisk the egg and milk mixture into the grits. Pour the grits mixture into the prepared dish. Bake until the grits feel firm to the touch in the center, about 1 hour. They should be golden brown on top. Let stand for 10 minutes and serve.
