This is an easy to prepare yet elegant presentation of the ingredients - you can skinny it up by using egg substitute, low-fat fillings , low-fat cheeses etc. It's very adaptable to make it the way your family or guests prefer.
RECIPE INGREDIENTS
6 Eggs
1 C. Milk
1/2 C. Flour
1/2 tsp. Salt
1/4 tsp. pepper
1 C. Cheddar Cheese- shredded
Your Choice of Omelet Fillings - such as chopped ham, cooked crumbled sausage, cooked crumbled bacon, chopped mushrooms, chopped onions or green onions, chopped tomatoes, chopped peppers,chopped spinach etc...
DIRECTIONS
Put eggs, milk, flour, salt & pepper in a blender, run till smooth.Pour into a sprayed 9 X 13 pan. Bake at 450 degrees about 20 minutes or till set and it's just starting to brown. While very hot sprinkle over top all the filling ingredients you've chosen, spread them evenly across, followed by the cheese. From the narrow end of the pan - quickly but carefully roll up, placing the ending down, towards the bottom . Place it on a platter and serve hot. I often will serve this with a dollop of a cheese sauce on each 1' slice. To make ahead for a group you can make 3 and they'll fill a 9 X 13 pan rolled up. Cover with foil and put in a low heat oven to keep warm while preparing the rest of your brunch.
