Baked Squash with Swiss Cheese and Wild Rice

RECIPE INGREDIENTS
1 cup chopped onion
1 clove garlic
3 tbsp extra virgin olive oil
6 cups chopped yellow squash
1 cup cooked wild or brown rice
1 cup shredded low fat swiss cheese
1 egg, beaten
4 tbsp plain or seasoned panko or bread crumbs
Salt and Pepper to tast
2 tbsp melted butter
1 tbsp grated parmesan cheese
DIRECTIONS
In a skillet saute onions and garlic in olive oil until transparent.


Add squash and cook covered, over low heat for 10 minutes.


Cool and add rice and cheese, and egg. Mix well.


Spoon into a greased 1-1/2 quart casserole dish.


Combine panko, butter and parmesan and sprinkle over casserole.


Bake in a preheated oven at 375 degrees for 30 minutes. Serves 4-6
