Baked Sweet Potato Chips

Makes 4 servings
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 2 large sweet potatoes
Preheat the oven to 400 degrees F.
Lightly oil a baking sheet and set it aside. In a bowl, combine the olive oil, salt and ginger.
Peel the potatoes and cut them into 1/8-inch slices. Put the potatoes in a bowl, add the oil and ginger mixture. Toss to blend evenly.
Arrange the slices on the baking sheet. Bake for 25-30 minutes, turning every 10 minutes, until the potatoes are tender and lightly browned.
