Baked Sweet Potato Chips

1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon ground ginger
2 large sweet potatoes
Preheat the oven to 400 degrees F.

Lightly oil a baking sheet and set it aside. In a bowl, combine the olive oil, salt, and ginger.

Peel the potatoes and cut them into 1/8-inch slices. Put the potatoes in a bowl, add the oil and ginger mixture. Toss to blend evenly.

Arrange the slices on the baking sheet. Bake for 25 to 30 minutes, turning every 10 minutes, until the potatoes are tender and lightly browned.
