This is a super easy bar recipe that comes together quickly with ingredients that you probably have in your pantry. The sour cream makes them moist and the cream cheese frosting is the perfect topper.
1/4 cup butter, melted
1 cup sugar
2 eggs
2 tsp. vanilla
1 cup sour cream
1 cup (about 4 medium) ripe bananas, mashed
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
8 oz. cream cheese, softened
1/4 cup butter, softened
1 tsp. vanilla
2-1/4 cups confectioner’s sugar

Preheat oven to 350 degrees. Cream together the butter, sugar, eggs and vanilla. Add the sour cream and bananas and mix well.

In another bowl, mix the flour, baking powder and baking soda. Add the flour mixture into the banana mixture. Pour into a greased (spray with cooking spray) 9 x 13 pan. Bake for 25 minutes and cool completely.

For the frosting, combine all the ingredients and mix until it reaches desired consistency. Frost cooled bars and serve.

More of a cake than a dessert bar
I would consider this more of a cake than a dessert bar. I used really ripe bananas for a richer flavor, but even then couldn't taste the bananas in the finished product. The cream cheese frosting was way to sweet and overpowering. The reviews from tasters were mixed but definitely more leaned towards dislike than like. I would not make this recipe again, even as a cake. If you like a lighter flavor in your desserts, this might be the recipe for you, but half the frosting and only drizzle it on.
