BBQ Pulled Pork Potato Skins

12-14 potatoes
3 cups BBQ sauce
1 1/2c shreeded cheese (jack or chedder)
1 cup sour cream
1 diced red pepper
1/2c finely chopped scallons
2-4lb pork shoulder seasoned with a dry rub consisting of: 2 tbsp of black pepper, 2 tbsp salt, 2 tbsp garlic powder, 2 tbsp  onion powder, 2 tbsp cayenne pepper, 1/4C brown sugar and 2 tsp liquid smoke.
1.Pre-heat oven to 325oF.

2. Mix all ingredients for dry rub and coat pork shoulder.

3. Place seasoned pork shoulder in a baking dish with an inch of water, covered with tin foil.

4. Cook for 4-5 hours, depending on size. (Read directions on package for specific time)

5. Clean potatoes and pierce with a fork. Bake for 30 minutes at 325oF.

6. Allow to cool and cut in half. Core out the middle of the potatoes just leaving the skin intact. (Remaining potatoes can be saved to further use)

7. Allow pork to cool slightly and shed pork, then toss in BBQ sauce. Pork mixture can be made the day before and stored in the refrigerator.
