My family consists of vegetarians, meat-eaters and plan old picky eaters. But we ALL agree on this sloppy tasty mix up. It's easy to adapt to whomever is around and takes well to the addition of various meats.
RECIPE INGREDIENTS
1 small green pepper
1 small yellow pepper
1 small red pepper
1 small onion
1 14 - 15 oz can dark red kidney beans
1 14 - 15 oz can black beans
1 14 - 15 oz can pinto or Roman beans
1 small can tomato paste
1 16 oz can diced tomatoes with garlic and olive oil
2 tablespoons olive oil
2 tablespoons minced garlic
Cumin
Chili powder
Tortilla chips
Shredded cheeses
Sour cream
Salsa
DIRECTIONS
Preparation:


Cut onion in half lengthwise and thinly slice, set aside.


Dice the peppers in 1/4 - 1/2 inch cubes


Heat oil in fry pan, add onion and peppers and saute till soft and lightly caramelized.


Drain the cans of beans and add to pan stirring till soft, then mash with the back of a wooden spoon; mixing in garlic and spices to personal taste. (I go a little heavy on the cumin, it's a family favorite)


Add tomatoes and paste, stir completely and let simmer for about 20 minutes.


Serve over tortilla chips and dress with shredded cheeses, sour cream and salsa to taste.
