Beef & Blue Crostini

I entertain a lot and this recipe is always the first thing to go! It's easy and makes for a super-impressive display.
1 French baguette
Olive oil
Fresh cracked black pepper
Kosher salt
½ cup Daisy sour cream
1 tbsp horseradish
2 tbsp fresh chives, finely chopped
Salt to taste
1 pound thinly sliced roast beef
1/4 cup blue cheese, crumbled
Preheat oven to 400 degrees.

Cut baguette into 1/3 inch slices and lay out on cookie sheet. Drizzle slices with olive oil and sprinkle with salt and pepper. Bake 8-10 minutes or until bread slices start to toast on the bottom.

While bread is toasting, mix Daisy sour cream, horseradish, chives and salt to taste and set aside.

Remove bread slices from oven and arrange roast beef slices on top. Top with horseradish cream then sprinkle each crostini with blue cheese.

Garnish with additional chopped chives if desired.
