Beef or Shrimp with Sugar Peas in Oyster Sauce from Camano Blossom B&B in Camano Island, Washington, a BnBFinder listed inn.
Ingredient List #1, Ingredient list #2 (marinade)
1 pound sliced beef – flank steak 1 tsp cornstarch or shrimp
8 oz fresh sugar peas ½ tsp soy sauce
6 pieces fresh or dry Shitake mushrooms ½ tsp sugar
4 oz sliced carrots ½ tsp sesame oil
2 Tablespoons vegetable oil ¼ teaspoon baking soda
Vegetable oil
2 cloves minced garlic
Ingredient List #3 and #4
1 cup water 2 tablespoons cornstarch
3 tablespoons oyster sauce 2 tablespoons cold water
2 tablespoons sugar
1 tablespoon sesame oil
Prepare the beef by trimming all fat and washing the meat.

Slice into ¼ inch thick pieces and place into a large bowl.

Add the ingredients from list #2, mix thoroughly and set aside for about ½ hour.

In a large pot bring 2 quarts of water to a boil.

Heat the wok at high temperature and add 2 tablespoons oil.

Reduce to medium.

Cook the meat for about 3 minutes.

Remove from heat and place aside.

Blanch all vegetables in the boiling water for 1-2 minutes.

Remove from the water.

Mix ingredients from list #3 in a small bowl.

Mix ingredients from list #4 in a separate bowl.

Clean the wok and reheat under medium heat with 1 teaspoon vegetable oil.

Add garlic and lightly brown.

Stir in the ingredients from list 3 to make a cooking sauce.

Bring to a boil and slowly add the cornstarch solution (ingredient list 4).

Reduce to medium or low heat.

Whisk constantly until the mixture is thick and smooth.

Add the meat and vegetables and stir enough to warm.

Do not overcook.

Finish with a touch of sesame oil.
