Beef Stroganoff

Delicious Stroganoff alternative for those who have an allergy to milk products like sour cream. Can add more tomato paste to give a more tangy taste if you like.
1 TBLSP. Olive Oil
1 TBLSP. Dried Minced Onions
1 1/2 tsp. Minced Garlic
1 8 oz. can Sliced Mushrooms
1/4 cup Sliced Red, Orange, & Yellow Peppers-(Optional)
2 lbs. Stew Meat, tenderized-(optional)
2 cups Beef Broth or Boullion
2 TBLSP. Tomato Paste
1/4 cup Gravy Flour
2 cups Cooked Egg Noodles
Salt & Pepper to Taste
Heat Olive Oil slightly in skillet or frying pan. Add Onion, Garlic, Mushrooms, & optional Peppers. Saute in oil until tender. Add optionally tenderized Stew meat. Cook until browned, approx. 15-20 minutes. Add Beef Broth or Boullion & Tomato Paste. Cook 30 minutes on low medium heat. Put Gravy Flour into cup or bowl. Gradually add Beef Broth or Boullion from skillet to flour stirring with each liquid addition til smooth & the consistancy of very thick gravy. Pour while stirring into skillet with meat & vegetables. Add Cooked Egg Noodles, stirring to mix well. Simmer slowly for 10 to 15 minutes until thickened. Stir occassionally to prevent sticking to bottom of pan. Serve hot. Makes 6-8 servings.
