Beet Salad with Goat Cheese, Raisins and Pine Nuts

RECIPE INGREDIENTS
Mixed Field Greens
2 large Roasted Beets, cubed
1/2 C. Golden Raisins
1/4 C. Pine nuts, toasted lightly
1 C. Haricots Vert, blanched, dipped in ice bath, and halved.
4 oz. goat cheese, crumbled
Olive Oil
Red wine vinegar
Kosher Salt and fresh ground pepper
DIRECTIONS
In a large bowl, add field greens, cubed beets, haricots vert, raisins and crumbled goat cheese. Sprinkle olive oil liberally. Add salt and lots of fresh ground pepper. Sprinkle red wine vinegar to taste. Toss with tongs and serve on cool plates and top with pine nuts.
