Belgium Pie........using left over pie crust.

This is 'recipe' my GrandFather put together about 90 years ago. He was a glass cutter by trade, but baked for his wife and 4 children every Saturday....breads, pies, etc. This 'Belgium Pie' has become a favorite of our family......I make pie
Pie crust dough
3/4 cup light brown sugar
pinch of salt
2 eggs, beaten well with fork
3 or 4 pats of butter
Pre-heat oven to 375

Roll pie crust to fit tin or glass pie plate(s).

Fit crust into pie plate.

Sprinkle brown sugar evenly over bottom of pie.

Pour beaten eggs over the sugar.

Place pats of butter on top of egg.

Bake about 20 minutes, or until the egg mixture has 'set' and the crust is golden.

Let cool a bit........then chow down on some very good and sweet eating.

Belgium Pie or Thanksgiving Leftover Pie
Yours is good but My grandmother's is better. Some 50 years ago, with left over dough, evaporated milk, brown sugar, butter and cinnamon and in her special little pie tin she let us make a pie crust that was not perfect. We sprinkled it with the left overs from the pumpkin pies. Baked it and enjoyed it more than any other pie we had! Now as adults we make several 9 inch ones for Thanksgiving - or there is too much fighting for a slice!
