I found this recipe in a magazine and refurbished it to suit our tastes. My sister-in-law tells me I should bottle it to sell!
RECIPE INGREDIENTS
1 can Rotel, original  undrained
2 cans diced tomatoes, undrained
1 medium onion, chopped
2 lg garlic cloves, minced
1 jalapeno, seeded and chopped
1/4 tsp cumin
1 whole lime, squeezed
tomato paste if it needs thickening
1 large bunch cilantro, washed, stemed and chopped
DIRECTIONS
Mix all the ingredients together EXCEPT the tomato paste and cilantro. If it needs to be thicker, spoon the paste in spoon by spoon until the thickest you desire. Add the cilantro, chill and stir well before serving. I serve with baked Scoops.
