Black Bean Chipotle Dip

Makes 14 (2 tablespoons) servings
This dip gets its terrific smoky flavor from chipotle chili pepper. Add extra chipotle to turn up the heat. This dip tastes just as good with fat-free sour cream.
- One 15-ounce can black beans, rinsed, drained and mashed
- 1/2 cup sour cream
- 1/4 cup tomato paste
- 1 teaspoon McCormick Gourmet Collection Chipotle Chile Pepper
- 1/2 teaspoon McCormick Gourmet Collection Ground Cumin
- 2 tablespoons onion, chopped
- 2 tablespoons tomato, diced
- 1 teaspoon fresh cilantro, chopped
Combine the beans, sour cream, tomato paste, chipotle chili pepper and cumin. Refrigerate 20 minutes.
Garnish top of dip with onion, tomato and cilantro. Serve with tortilla chips, and salsa or guacamole, if desired.
