Black Pepper Chops and Grilled Salsa

RECIPE INGREDIENTS
4 center cut pork chops, 1/2 inch thick
1/4 cup vinegar
1/2 teaspoon red pepper flakes
2 tablespoons course group black pepper
2 teaspoons salt
1 onion
2 tomatoes
2 avocado
1 jalapeno
1 lime
2 tablespoons chopped cilantro
2 tablespoons butter
DIRECTIONS
Prepare grill for med-high heat grilling. Place chops in a large bowl and vinegar. Toss well coating chops with pepper, salt and red pepper. Roughly chop onions, tomato, avocado and mix with diced jalapeno and cilantro. Squeeze lime juice over mixture. Place mixture onto the center of a square of heavy duty foil, top with butter and wrap into a tight packet. Place packet on the grill top while chops are grilling. Grill for 15 minutes. Grill chops 8 minutes per side until internal temperature of 160 degrees. Serve grilled chops topped with salsa.
