This recipe comes from Cechoslovickia where my great grama made these for her kids. My mom made them for us and now I make them for my family. They are delicious and easy to make.
RECIPE INGREDIENTS
For Pancakes
2 cups of flour
½ - ¾ cup of water or milk
For Filling
8 oz of cottage cheese
1 tablespoon of cinnamon (or more if you love cinnamon)
For Topping
Sour Cream and/or Apple Sauce
DIRECTIONS
For pancakes – put the flour in a bowl and add ½ c of the water or milk and stir until well mixed. Add more water or milk until the mixture is on the thin side.


For filling – put the cottage cheese in a bowl and add the cinnamon and stir until well mixed.


Lightly grease a large skillet and heat. Take a ladle of your pancake mixture and put in the skillet. Take your skillet in your hand and circle it until the mixture is on the bottom of the pan (like a tortilla). Wait about 1 minute and flip the pancake. When you see light brown on the pancake bottom, take the pancake out of the pan and put it on a plate.


Put a large tablespoon (or more if you’d like) of the cottage cheese mixture on the lower part of the pancake, spread it in a line just above the bottom of the pancake. Bring up the bottom of the pancake over the cottage cheese and roll.


Continue this until all blintzes are done. I usually work with two pans. That way it goes quicker.


Top with sour cream or apple sauce. Enjoy!
