Blue Cheese and Bacon 'Cake'

this is a great item to serve for breakfast or any time you are craving something savory.
1 1/2 cups AP flour
2 teaspoons baking powder
1 teaspoon chile powder
1/2 teaspoon sea salt
4 large eggs, at room temp
1/4 cup olive oil
1/2 cup plain whole milk yogurt
1 1/2 teaspoons Dijon mustard
1/2 small bunch chives, finely chopped
5 ounces well-crumbled blue cheese (it is easier to crumble if it is very cold)
2 ounces parmesan cheese (2/3 cup grated)
8 strips of bacon (5 ounces), cooked until crisp, then crumbled into very small pieces
reserve the bacon fat for greasing the pan
Grease a 9 inch loaf pan and line the bottom with a piece of parchment paper

Preheat oven to 350 degrees F

in a large mixing bowl, whisk together the flour, baking powder, chile and salt

in a separate bowl, whisk together the eggs, olive oil, yogurt, mustard and chives until smooth

make a well in the center of the dry ingredients and use a rubber spatula to stir in the wet mixture, stirring just until the wet ingredients are almost incorporated. Don't overmix.

fold in the blue cheese, parmesan, and bacon pieces until everything is just moistened. scrape the batter into the prepared loaf pan.

bake for 1 hour, until the top is golden brown and the cake springs back when you gently touch the center

let the cake cool for 5 minutes, then tilt it out onto a wire cooling rack. peel off the parchment paper and let cool upright before slicing.
