Blueberry Muffins

  • 2 cups self rising flour
  • 1/2 cup superfine sugar
  • 1 egg
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 tablespoon grated orange zest
  • 3/4 cup blueberries


Preheat oven to 400 degrees F.

Grease a 12 cup muffin pan.

Place flour and sugar in bowl. Stir until combined. In another bowl, beat egg and stir in milk and butter. Add to dry ingredients with orange zest and blueberries. Mix lightly; do not overbeat. Spoon mixture into prepared cups, filling each two-thirds full. Bake for 20 minutes, or until golden brown.
