Boiled Potatoes and Spinich

Excellent with any main course calling for a vegetable side dish. Easy to take for potlucks. Excellent leftovers for casseroles using meats, poultry or even just cheese and eggs for a breakfast souffle. This recipe doubles perfectly.
8 medium sized boiling potatoes
3 large bunches of spinich
3 tablespoons Vegeta seasoning (from Croatia)
1/2 cube good quality butter (sliced in pats)
1/2 cup heavy whipping cream (warmed)
pepper to taste
Peel and halve the potatoes and place in large pan with simmering water

Bring to a boil and cook until tender -- drain and leave in the large pan

Add the cleaned leaves of spinich -- place leaves on top of the potatoes and cover the large pan with its lid, cover with a cloth and let the leaves steam and soften on top of the potatoes

After 15 minutes, remove lid and mix the potatoes and spinich leaves until spinich is well distributed

Add the 1/2 cube of butter (in pats) and drizzle in the 1/2 cup of warmed heavy cream and the 3 tablespoons of the Vegeta seasoning.

Blend all together with a wooden spoon. Mixture should be chunky and the spinich leaves well blended with the potatoes and other ingredients.

Add pepper to taste.

Serves 4-6 (goes fast and people usually have seconds)
