- 1 cup brown sugar
- 1 cup granulated sugar
- 3 cups flour
- 3 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 ounces grated chocolate
- 1 cup mini chocolate chips
- 1/2 cup nuts (optional)
- 3 eggs, beaten
- 3 teaspoons vanilla extract
- 1 cup oil
- 2 1/2 cups grated zucchini
Preheat the oven to 400 degrees F. Grease 26-28 muffin cups or line with paper cups.
Mix the first 10 dry ingredients together. Mix the wet ingredients separately, then add to the dry ingredients.
Fill muffin cups about 3/4 full. Bake for 18-20 minutes.
