Breakfast Pie

10-12 servings


  • 1 stick butter
  • 2 pounds small curd cottage cheese
  • 6 eggs
  • 6 tablespoons sugar
  • 1 cup Bisquick
  • Cinnamon (optional)


Melt the butter and pour over the cottage cheese in a large bowl. Add the eggs, sugar and then Bisquick, mixing well after each addition. Pour the entire mixture into a 3-quart rectangular baking dish (lightly greased). Sprinkle with cinnamon sugar (optional) and bake for 45 minutes at 350 degrees F. Cut into squares and serve with fresh berries or fruit topped with vanilla yogurt.
