Breakfast Strata

This is a very traditional breakfast strata. The caramelized shallots add a wonderful flavor as does the hollandiase when served. If you want to cut the calories - cut the hollandiase.
6 - 10 slices white bread
1 pound of your favorite bulk breakfast sausage
2-3 shallots, sliced thinly
3 T butter
12 eggs
1-1/2 cups half-and-half
1 t vanilla
salt and pepper to taste
2 c shredded cheeses
fresh basil to garnish
Generously grease 13 x 9 pan.

Cut crusts off of bread.

Lay bread in the pan nice and snug until the bottom of the pan is covered.

Brown sausage and discard all but 1 T rendered fat.

Spread cooked sausage over the bread.

Using 1T butter saute shallots until caramelized.

Spread cooked shallots evenly across sausage.

With a whisk or hand mixer beat eggs and half-and-half until completely incorporated.

Add vanilla to egg mixture and mix to combine.

Pour egg mixture over the bread, sausage, shallot layers and season with salt and pepper.

Top with shredded cheeses.

Cover and refrigerate overnight.

Bake at 350º for 45 - 60 minutes until egg in the middle is set. Let cool 5 - 10 minutes before serving as melted cheese is very hot.

Make a quick batch of blender hollandaise on the thin side.

To plate:

Cut and square of strata and place center in plate. Pour a tablespoon or so of hollandiase over strata.

Add a sprig of fresh basil as garnish.
