Makes 1 loaf
In order to make this in the bread machine I've had to cut back a bit on the eggs and butter. The result is a lighter textured brioche-like white loaf with plenty of flavor and marvelous texture.
- 3 1/4 cups unbleached all purpose flour
- 2/3 cup (or more) warm water
- 2 extra-large eggs
- 3 tablespoons sugar
- 3 tablespoons Lora Brody's Dough Relaxer (optional)
- 1 tablespoon yeast
- 1 1/2 teaspoons salt
- 8 tablespoons (1 stick) unsalted butter, room temperature
Combine all ingredients in bread machine. Program machine for White or Sweet Bread. During first knead cycle after butter has been incorporated, add more water if necessary to make soft, supple dough ball.
