Brown N' Spicy Cookies

I wanted to create a cookie recipe that wasn't overly sweet but full of flavor. I put the focus on spice instead of sweetness and the result is my new favorite cookie! Enjoy.
1 3/4 cup all purpose flour
1/2 cup dry cereal granola
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 stick + 3 tbsp. unsalted butter
1 1/4 cup sugar
1/2 cup brown sugar
1 tblp. vanilla
1 1/2 tsp. Chinese 5 spice
1 tbsp. cocoa powder
2 large eggs
Preheat oven to 325 degrees

1. Mix the flour, granola, baking soda, baking powder, and salt in a large bowl.

2. Brown one stick of butter in a pan until it turns slightly brown and takes on a nutty aroma. Add the remaining 3 tbsp. butter and let rest in the refrigerator for 10 minutes.

3. Add sugar, brown sugar, vanilla, and cocoa powder to an electric mixer. Start mixer and then slowly add the browned butter mixture. Add Chinese 5 spice. Slowly add eggs one at a time until just incorporated.

4. Roll the dough into 1 1/2 inch balls and bake at 325 degrees for 10 minutes. The cookies should be slightly raw in the middle. Let the cooked cookies sit on the pan, out of the oven, for 1 minute so they come off the pan cleanly.

Good with milk, GREAT with coffee.
