This is the perfect brunch recipe. Dress it up or down with different types of salsa and cheeses. Easy, tasty, and not too spicy for those with delicate tastebuds!
RECIPE INGREDIENTS
2 cups (12 oz) ground fully cooked ham
1/3 cup chopped onion
1/3 cup chopped green pepper
2½ cups shredded cheddar cheese
8-7” flour tortillas (low carb ones are light and fluffy)
4 beaten eggs
2 cups milk
1 T flour
¼ tsp salt
¼ tsp garlic powder
1/4 teaspoon red pepper sauce
1 cup shredded cheese
DIRECTIONS
In bowl, combine ham, cheese, onion and green pepper. Place 1/2 cup of the above mixture at one end of each tortilla; roll up. Arrange tortilla, seam side down in greased 9x13 casserole. Combine remaining ingredients except cheese and pour over tortillas. Cover and refrigerate several hours or overnight. Bake uncovered at 350º for 45-50 minutes or until set. Sprinkle with remaining cheese. Bake 3 minutes more or until cheese is melted. Let stand 10 minutes. Garnish with cilantro and sour cream. Serve with salsa if desired.
