Brynn’s Atomic Chili

A firey hot bowl of red just right for that special football game or a snowy winter's evening.
3ea 30 oz cans chili beans, drained
3ea 14.5 oz cans diced tomatoes, drained
2-3 lbs. hot Italian bulk sausage
12 oz bottle “Chili Beer” or your favorite brew
1 lg. white onion, diced
1 lg. green pepper, diced
2 Habanero peppers, fresh, chopped (caution when handling all fresh hot peppers)
6 Cayenne peppers, dried, crushed
8 Tabasco peppers, fresh, chopped
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons ground cumin
2 tablespoons chili powder
2 tablespoons olive or vegetable oil

Spray a heavy Dutch oven with cooking spray. Add oil and heat to medium-high. Add sausage and cook until sausage is lightly browned. Drain and add half of the beer, onion & all peppers; mix well & cover. Simmer until beer is almost gone. Add remaining beer and stir in all other ingredients. Bring to gentle boil stirring frequently to avoid sticking. Reduce heat, cover and simmer for 1 hour stirring occasionally. Remove lid and simmer for at least 2 more hours.

Place a small handful of corn chips in the bottom of the bowl, add chili, garnish with shredded cheese and a dollop of sour cream. Best served with ice cold beer.
