Buttermilk Scones

  • 2 cups unbleached flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Dash of nutmeg
  • A couple of teaspoons of orange or lemon zest
  • 1/4 cup butter
  • 1 egg
  • 1/2 cup buttermilk


Combine the dry ingredients and cut in the butter. Beat the egg into the buttermilk and pour over the dry ingredients, mixing with a fork. Turn the dough onto a floured board and knead briefly. Form into a 7-inch circle and cut into wedges. Bake on an ungreased sheet at 350 degrees F for 12-15 minutes. If using a convection oven set at 330 degrees F.
