Cabbage Roll Soup (Leave out Meat for Vegetarian)

I made this for my mom who loves cabbage rolls and put my own spin on it. Her and my father loved it. You could add the cooked rice straight to the soup if you wanted but I kept it on the side so it didn't soak up to much of the broth just as a percaution
1/2 Stick Butter (I use organic)
1 package Better With Cheddar Sausages Sliced (Walmart)usually by the hot dogs
1 lg or 2 med potatoes
1 TB Paprika
2 carrots shredded
2 ribs celery chopped
2 cloves of garlic minced
1 med onion chopped
Sea Salt & Coarse Black Pepper to taste
1 med head of green cabbage (or half green half red)chopped
Pinch Cayanne Pepper
1/2 t creole seasoning (I use Tony's)
1/2 t cajun seasoning
1/4 t ground mustard seasoning
2 TB Dried Parsley Flakes
1/2 bottle Honey Brown Beer (Room Temp)
1 lg can Red Gold Tomato Juice
2 cans diced fire roasted tomatoes
Sour Cream
Rice (on the side)
Small package sliced mushrooms
4-6 pieced crumbled bacon (cooked)
2 TB Olive Oil
Chop all veggies & slice sausage, Heat dutch oven or large pot on med-high heat,add oil and brown sausauge, remove sausage and set aside, add 1/2 stick butter, potatoes, paprika, creaole & cajun seasoning, carrots, celery, garlic, onion, mushrooms, salt & pepper, saute 5-6 minutes or until onion is translucent then add cabbage and ground mustard, cover until cabbage is wilted. Deglaze by adding beer and stir, add tomato juice, diced tomatoes, parsley flakes, and cooked sausage, stir then bring to boil. Cover and simmer 30-60 minutes. While thats cooking make rice according to directions or in a rice cooker. Layer in bowls rice, soup, dollop of sour cream, garnish with bacon, Enjoy!
