Cajun Chicken with Mustard Sauce

- 1 cup all-purpose flour
- 2 teaspoons dried oregano, finely crumbled
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground thyme
- 1/2 teaspoon cayenne pepper
- 5 tablespoons unsalted butter
- 4 chicken breast halves, cut into pieces
- Combination of your favorite mustard varieties
Combine flour and all the seasonings in a shallow dish. Melt 3 tablespoons butter in a saucepan. Dip each piece of chicken in butter then in flour mixture. Melt remaining butter in a large frying-pan. Add chicken, in batches, then saute until browned and cooked through. Serve with a dipping sauce made from the mustards.
