Cajun seasoning will excite the traditionally unexciting potato with layers of flavor - peppers, onion, garlic and herbs . Serve this spicy, soulful potato dish as a side dish to grilled or roasted meat entrees.
- 4 tablespoons olive oil
- 2 large onions, peeled and finely sliced (about 5 cups)
- 4 russet baking potatoes, peeled, quartered and thinly sliced (6 cups)
- 1 tablespoon McCormick® Gourmet Collection™ Cajun Seasoning, divided
- One 14 1/2-ounce chicken broth
Heat the olive oil in a large skillet. Cook the onions over high heat, 5-10 minutes, or until lightly browned.
Grease a 12 x 8-inch baking dish and add an even layer of potatoes. Sprinkle with 1 1/2 teaspoons Cajun seasoning. Top with a layer of onions. Make another layer of potatoes, onions and remaining seasoning.
Add the broth and bake at 375 degrees F for 45-50 minutes, or until potatoes are softened. Let stand 5 minutes.
