Cajun Potatoes and Onions

Cajun Seasoning will excite the traditionally unexciting potato with layers of flavor - peppers, onion, garlic and herbs . Serve this spicy, soulful potato dish as a side dish to grilled or roasted meat entrees.
RECIPE INGREDIENTS
4 tablespoons olive oil
2 large onions, peeled and finely sliced (about 5 cups)
4 russet baking potatoes, peeled, quartered and thinly sliced (6 cups)
1 tablespoon McCormick® Gourmet Collection™ Cajun Seasoning, divided
1 can (14 1/2 ounces) chicken broth
DIRECTIONS
Heat olive oil in a large skillet. Cook onions over high heat 5 to 10 minutes, or until lightly browned.


Grease 12x8-inch baking dish and add an even layer of potatoes. Sprinkle with 1 1/2 teaspoons Cajun seasoning. Top with a layer of onions. Make another layer of potatoes, onions, and remaining seasoning.


Add broth and bake at 375 degrees F for 45 to 50 minutes, or until potatoes are softened. Let stand 5 minutes.
