Cajun Praline Turkey Cutlets

  • 1/3 cup maple syrup
  • 1 tablespoon margarine
  • 1 pound turkey cutlets
  • 2 slices (1/8 inch thick) turkey ham, each cut in half
  • 1 ounce Monterey Jack cheese, cut into 1/4 x 2-inch strips
  • 2 teaspoons Creole seasoning
  • 1/4 cup pecans, finely chopped
  • 4 tablespoons plain yogurt or light sour cream


In an 8-inch microwave-safe dish, combine syrup and margarine. Cover and microwave on high (100% power) for 20 to 30 seconds or until margarine is melted. Set aside.

On each cutlet, place a slice of ham. Arrange a cheese strip at one end of ham-topped cutlet. Roll cutlets up, jelly-roll style, to encase cheese. Place rolls, seam-side down, in a baking dish with syrup mixture. Sprinkle each roll with 1/2 teaspoon Creole seasoning.

Cover dish with wax paper and microwave on HIGH (100% power) for 2 1/2 minutes. Rotate dish 1/2 turn and baste rolls with sauce. Sprinkle pecans over top and recover. Microwave on high (100% power) for 2 1/2 minutes.

Allow rolls to stand, covered, 1 to 2 minutes before serving. Top each roll with 1 tablespoon yogurt or light sour cream.
