This recipe is delicious I came up with it by randomly cobbling together several ingredients which i liked.
Tempeh bacon rubbed with Cajun spice and liquid smoke
Yves Ham rubbed with same spices
2 cups soaked haricot beans
1 tub of salsa
1 red onion chopped
1 yellow onion chopped
1 bunch collard greens sliced and steamed
1 stalk celery diced
½ bunch kale chopped and steamed
2 carrots chopped1 zucchini chopped
1 red pepper deseeded and chopped
1 cup white rice
sauté onions garlic, red pepper and carrots and celery til tender.

Add water, and soaked haricot beans. Cook for 30 minutes.

When cooking rub Cajun spice liquid smoke into tempeh bacon and eves bacon

Add salsa and rice and collards and cook for 20 more minutes.

Add kale and cook til wilted

Serve and garnish with tempeh bacon

Cajun smokey bacon stew
Typical Cajun spices are basil and thyme, rosemary, and sometimes oregano, and sometimes Cayenne, always garlic. (Cajun is not about hot as much as it is about spices.) A Cajun stew would have the "holy trinity" of onions, bell pepper and celery, no carrots or zucchini. Carrots are for vegetable soups and daube. To get a smokey flavor Cajuns use smoked ham hocks, turkey legs, or tasso.
