Talk about crowd pleasers! The 'sweet' fries are served with a dipping sauce that is both cool and fiery at the same time.
Sweet Potato Fries:
4 large sweet potatoes, peeled
2 tablespoons vegetable oil
1 tablespoon Cajun seasoning
1 teaspoon sea salt
Dipping Sauce:
1 cup Daisy Sour Cream
1 seeded and minced chipotle pepper (packed in adobo sauce)
1-1/2 tablespoons lime juice
1/2 teaspoon grated lime zest

Preheat oven to 425 degrees. Line a large baking sheet with foil.

Cut potatoes in half lengthwise and cut into 1/2-inch thick fries (similar to steak fries). In large bowl toss together sweet potatoes and oil. Sprinkle with Cajun seasoning and salt; toss again. Arrange fries in single layer on prepared baking sheet.

Bake 20 to 25 minutes or until golden brown and tender, turning once.

For Fiery Lime Dipping Sauce: Whisk together sour cream, chipotle, lime juice and zest in small bowl until blended. Serve with fries.
