- Active Time 15m
- Total Time 15m
Capellini is very thin pasta shaped like spaghetti. If you can't find sun-dried tomato sausage use mild or hot Italian sausage instead. You can purchase sun-dried tomato sausages at most specialty food stores, many supermarkets and online.
- 2 pounds dried capellini or other thin pasta
- 2 tablespoons olive oil
- 2 pounds sun-dried tomato-flavored sausage, casings removed
- 12 drained oil-packed sun-dried tomatoes, thinly sliced
- Grated peel from 2 lemons
- 1/3 cup fresh lemon juice
- 2 cups cherry tomatoes, halved
30 fresh basil leaves, thinly sliced
- Salt and freshly ground black pepper
- 1/2 cup freshly grated Parmesan cheese
Cook pasta in large pot of boiling salted water until just tender but still firm to bite, about 6 minutes. Drain.
Meanwhile, heat oil in large skillet over medium-high heat. Add sausage and sauté until cooked through, breaking up sausage with spatula, about 6 minutes. Add sun-dried tomatoes, lemon peel and lemon juice. Cook 1 minute longer. Add cherry tomatoes and cook just until heated through, about 1 minute longer.
Toss sausage mixture, cooked pasta and basil in large serving bowl. Season to taste with salt and pepper. Sprinkle with cheese and serve.
