RECIPE INGREDIENTS
2 CUPS FRESHLY GRATED COCONUT
1/2 CUP RAISINS
1/2 CUP MIXED PEEL
1/2 CUP CRUSHED PINEAPPLE DRAINED
1/2 CUP CANDIED OR DRIED CHERRIES
1 LARGE EGG
4 CUPS FLOUR
4 TEASPOON BAKING POWDER
1 TEASPOON SALT
1 STICK UNSALTED BUTTER MELTED
1 TEASPOON CINNAMON
2 TEASPOON VANILLA
1/4 TEASPOON GRATED NUTMEG
1/4TEASPOON PUMPKIN PIE SPICE
2 CUPS SUGAR
DIRECTIONS
IN A BOWL COMBINE COCONUT,SUGAR,RAISINS,MIXED PEEL,


CRUSHED PINEAPPLE,CHERRIES,VANILLA, EGG AND BUTTER


SIFT FLOUR,BAKING POWDER,SALT ADD TO COCONUT MIXTURE


MIX WELL,ADD NUTMEG,CINNAMON,PUMPKIN PIE SPICE


STIR WELL TO COMBINE POUR INTO TWO LOAF PANS


BAKE FOR 40 TO 50 MINUTES AT 350 DEGREES


REMOVE WHEN A TOOTH PICK INSERTED COMES OUT CLEAN

I made this bread twice. The dough was too dry to work with. The first time I made the bread I added a quarter cup more of pineapple and enough orange juice to make the dough moist. It tasted great. The second time I made this bread I added a little more orange juice and a little evaporated milk to make the dough moist. Again, it was great. This is a very easy bread to make. It was a hit.
