Carolyn's Cool Corn Salad with Citrus Dressing

This recipe when chilled is truly refreshing, taste great and your family will love it and ask for it often. It can be a main course for a light summer meal, as well as a side to a deli sandwich, or even with a dish such as grilled salmon, or Bar-b-q
RECIPE INGREDIENTS
5 cups of whole Kernel Corn (drained = 3 cans)frozen corn can be substituted or even fresh from the cob if you like.
1/2 cup ea. red, green and orange bell peppers
1/2 cup red/purple onion (chopped)
1/2 cup of sliced black olives (drained)
1 Cucumber (med/large) peeled, seeded and chopped
3 Roma Tomatoes (seeded and chopped)
1 large Jalapeno Pepper (seeded and chopped)
1 cup Ham chopped (smoked if possible)
1 1/2 cup of seasoned boiled shirmp (peeled and devained)
30-40 count
Kosher Salt and Fresh Ground Black Pepper to Taste
1 bag ea. Salad Greens (Spring Mix & American or European & Italian)
Citrus Dressing
2 cups Italian Dressing
1 cup of Fresh Squeezed Orange Juice
Juice of 1 Lime
2 TBSP Honey

DIRECTIONS
Mix all the above ingredients, with the exception of the salad greens. Chill for at least 1 1/2 hrs. Place on chilled salad greens. Mix together all the ingredients for the Citrus dressing. Pour over salad. Enjoy
