The islands beckon you. A down-right savory, sweet and spicy blend. Can be used for poultry, pork, beef, burgers, sausages, or brushed lightly on fish.
1 cup packed light brown sugar
1 tsp. ground mustard
1 tbsp ground ginger
1/8 tsp habinero pepper or pepper flakes (optional)
1/2 cup Ketchup
1/4 cup water or bourbon
1 tsp onion powder (or 1 tbsp chopped onion)
1 tsp garlic powder (or 1 tbsp chopped garlic)
1/4 tsp ground thyme
1/2 tsp jerk seasoning
1/8 tsp ground sage
Salt/Pepper to taste

Mix all ingredients in glass bowl; cover and allow to rest on counter for 1/2 hour to marry all flavors. To use as a marinade, add addititional 1/4 cup water to dilute. Can be prepared 24 hours prior to use if kept refrigerated.
