Quick, easy, healthy fish dish. Tilapia or any other white fish can be used.
RECIPE INGREDIENTS
EVOO
2 8-10 oz. Catfish Filets
Flour, Cajun or Old Bay Seasoning
White Cooking Wine
Juice of Whole Lemon
1 Tablespoon Capers
2 Tablespoons Butter or Margarine
DIRECTIONS
Pat 8-10 oz. Catfish filets with flour and Cajun Seasoning or Old Bay Seasoning.


Heat 2 Tablespoons EVOO. Sauté filets. Remove fish from pan to preheated 225 degree oven to keep warm.


Add to EVOO in pan:


White Cooking Wine


Juice of Whole Lemon


1 Tablespoon Capers


Turn off the heat on burner and add 2 Tablespoons Butter or Margarine.


Pour sauce over catfish filets and SERVE. (I like to add more capers before serving.)
