Catfish and Capers

Preparing and Cooking time could be longer, depending on size of Filets. But just as long as they start to flake apart this shows they are ready. Better when golden and slightly crispy.
RECIPE INGREDIENTS
4 Catfish filets
1 jar of Capers drained
1/2 stick of butter slices
2 Lemons
Accent
Garlic Salt or Powder
Onion Salt or Powder
Season all
Cooked white rice
DIRECTIONS
Pat dry Catfish Filets with a paper towel, Cut lemons in half and squeze over both side of filets. Sprinkle seasonings moderately over Filets. Heat a frying pan on med heat add melt 2 slices of butter to coat bottom of pan. Add 1/2 jar of capers (for 2 Filets) heat until you can smell the aroma of the capers. Place 2 Filets in the pan and coat with the butter and capers. Cover with a lid and cook for about 3 to 4 mins on each side. Then turn up heat and cook uncovered for about 5 min or golden brown on each side the capers will get blackend and crispy this is fine. Once the Filets are golden brown and slighly crispy, almost flaking. Put a cup full of cooked rice on a plate and lay One Filet on the top of it with a few spoon full of capers on top. Take all of the cooked capers out of the pan and Repeat instrutions for the other Filets. Garnish anyway you like. Any Vegetable is great with it. I like Asparagus or Fresh Broccoli. Enjoy.
