Catfish Stew

2lbs. of catfish filets or nuggets
5 med. white potatoes peeled and diced
4 med onions chopped
2 cups of V8 juice
2 cans of diced tomatoes
1 big can of whole tomatoes
1 can of tomatoe sauce
1/2 cup of Texas Pete
1 stick of butter
1 TBS of cayenne pepper
1 tsp of crushed red pepper
1 TBS seasoning salt
1 tsp of garlic powder
1 tsp of black pepper
1/4 lb. fatback or bacon chopped up fine
Fry fatback in a skillet, remove fatback pieces then saute onions in the fatback grease until clear. Put all ingredients in a large crock pot including the fatback pieces, cook on low for 8 hours. Break apart tomotoes and catfish and serve over white rice or with saltine crackers.
