Cheddar Turkey Melt

  12 servings
1 cup mayonnaise
1/3 cup sweet onion, minced
3/4 cup celery, finely chopped
2 tablespoons sweet honey mustard
1-1/2 teaspoons thyme
To taste salt and freshly ground black pepper
2-1/4 quarts cooked turkey, chopped or cubed
24 slices seven-grain or whole wheat bread
2-1/4 cups cranberry sauce
12 1-ounce slices Cheddar cheese
Combine mayonnaise, onion, celery, mustard, and seasonings. Blend in cubed cooked turkey. Cover and hold for service for up to 1-1/2 days.

Per order: portion turkey mixture onto bread slices and spread mixture evenly to the edges.

Top each with 3 tablespoons cranberry sauce and spread to edges. Cover each with 1-ounce slice Cheddar.

Broil sandwich until cheese begins to melt. Top with remaining bread slice. Cut on the diagonal and serve immediately.
