Cheddar Turkey Melt
- 1 cup mayonnaise
- 1/3 cup sweet onion, minced
- 3/4 cup celery, finely chopped
- 2 tablespoons sweet honey mustard
- 1 1/2 teaspoons thyme
- Salt and freshly ground black pepper to taste
- 2 1/4 quarts cooked turkey, chopped or cubed
- 24 slices seven-grain or whole wheat bread
- 2 1/4 cups cranberry sauce
- 12 slices (1 ounce each) cheddar cheese
Combine mayonnaise, onion, celery, mustard, and seasonings. Blend in cubed cooked turkey. Cover and hold for service for up to 1 1/2 days.
Per order: Portion turkey mixture onto bread slices and spread mixture evenly to the edges.
Top each with 3 tablespoons cranberry sauce and spread to edges. Cover each with 1 slice of cheese.
Broil sandwich until cheese begins to melt. Top with remaining bread slice. Cut on the diagonal and serve immediately.
