Cheese mashed potatoes

RECIPE INGREDIENTS
5 lbs. potatoes
1/2 to 1 lb. velveeta cheese
16 to 24 oz. sour cream
1/2 stick of butter
salt and pepper to taste
DIRECTIONS
peel and cut potatoes in chunks. boil 30 minutes (or until fork tender. Drain and place on low heat to slightly dry. Cut cheese into chunks and place in pan with potatoes. Cover with kitchen towel. When cheese is slightly melted, remove from heat and add sour cream and butter.Beat until smooth. Salt and pepper to taste. Adjust cheese and sour cream to your taste.
