Cheesy Basil Baked Tomatoes

Serve these warm, savory tomato melts on a bed of baby lettuce as an appetizer, or try them as a flavorful side dish. They shine when tomatoes are at the peak of ripeness.
- 4 medium tomatoes, cut into three rounds
- 1/4 cup grated Parmesan cheese
- 1 cup grated Gruyere cheese
- 2 tablespoons chopped fresh basil
- Salt and freshly ground pepper to taste
- 2 tablespoons extra-virgin olive oil
- 3 scallions, sliced, for garnish
Preheat the oven to 425 degrees F.
Place tomato slices on a nonstick baking sheet. Sprinkle with Parmesan and Gruyere cheeses. Sprinkle with basil and season with salt and freshly ground black pepper. Drizzle with oil.
Bake until tomatoes are cooked through but not so soft as to be falling apart, about 10 minutes. Sprinkle with sliced scallions and serve.
