Cheesy Chicken and Rice Casserole

Yield:  4 Servings
RECIPE INGREDIENTS
1 can (10 3/4 oz) Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice (or quick-cooking brown rice)
2 cups fresh or frozen mixed vegetables
1/2 tsp onion powder
4 skinless, boneless chicken breast halves
1/2 cup shredded cheddar cheese
Salt and pepper to taste
DIRECTIONS
Cut chicken breasts into 1 inch strips; salt and pepper to taste.


Stir soup, water, rice, mixed vegetables and onion powder in 12/8 inch shallow baking dish.


Top with chicken strips.


Bake at 375 degrees for 45 minutes, or until done.


Top with cheddar cheese.
